Jim's Rabbit Pie
Ingredients:
        2 Rabbits (medium size)
        2 Onions roughly chopped
        2 Carrots diced
        2 Potatoes diced
        1/4 cup Butter
        4 tablespoons Plain Flour
        Puff Pastry to suit
        Salt and Pepper to taste
        2 tablespoons chopped Italian parsley
Recipe directions:
Cut rabbits into pieces, put them into a saucepan with the onions, carrots and potatoes and just cover them with water, bring it to the boil and simmer until the rabbit is tender.
Remove the bones and reserve 2 cups of the liquid.
Melt butter in a pan and add the reserved liquid and the flour stirring constantly until it is thickened.
Add in the cooked and deboned rabbit along with the cooked vegetables plus salt, pepper and parsley and mix well.
Pour into a pastry lined pie dish and cover with remaining pastry then seal. Cut some vent holes in the top.
Cook at 180 deg C for approximately 15 to 20 minutes until the top is golden brown and the sauce is bubbling.
Portions are to be consumed with a nice red wine, preferably a cabinet merlot.
