Jim's Apricot Duck Appetisers

Ingredients - Game Apricot Sauce
        1 cup apricot preserves
        1/4 cup lemon juice
        1/4 cup water
        2 teaspoons corn-starch
        1/4 teaspoon grated lemon zest
        1 tablespoon sugar
        2 teaspoons Brandy

Ingredients - Main components
        1/2 to 1 cup of flour
        1/2 teaspoon salt
        1/4 teaspoon black pepper
        Breast from 1 duck cut into bite sized pieces
        2 tablespoons olive oil
        2 tablespoons butter

Recipe directions: Game Apricot Sauce
  • Place apricot preserves, lemon juice, water, corn—starch, lemon zest and sugar in a small saucepan.
  • Cook over moderate heat, stirring constantly until thickened.
  • Remove from heat and add brandy.
  • Serve with duck or goose.
  • Tip – Try this sauce with venison for a special treat

  • Place flour, salt and pepper into a bag, add the duck pieces and shake well to cover with the seasoned flour.
  • Add the olive oil and butter to a pan and bring to a medium high heat, lightly brown the duck pieces. Do not overcook — the duck should still be pink on the inside.
  • Serve duck pieces immediately with the Game Apricot Sauce or your favourite dipping sauce.
